Description

Delicious and wholesome Almond Butter Baked Apples filled with a spiced almond butter and walnut mixture, baked to tender perfection. This comforting dessert is naturally sweetened with maple syrup and can be served warm with a dollop of Greek or coconut yogurt for extra creaminess.

Ingredients

Scale

Main Ingredients

  • 4 medium apples (such as Honeycrisp or Fuji)
  • 1/4 cup almond butter
  • 1/4 cup chopped walnuts
  • 2 tablespoons maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup water

Optional Toppings

  • Plain Greek yogurt or coconut yogurt
  • Extra drizzle of maple syrup

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the apples evenly.
  2. Core Apples: Carefully core the apples, making sure to leave the bottom intact to hold the filling without it leaking out during baking.
  3. Prepare Filling: In a small bowl, combine the almond butter, chopped walnuts, maple syrup, cinnamon, nutmeg, and salt. Mix thoroughly until well blended.
  4. Fill Apples: Spoon the almond butter mixture into the hollow center of each apple, pressing gently to pack the mixture inside.
  5. Arrange Apples: Place the filled apples upright in a baking dish. Pour the water into the bottom of the dish to help keep the apples moist while baking.
  6. Bake Covered: Cover the baking dish with aluminum foil and bake for 25 minutes to let the apples cook through without drying out.
  7. Bake Uncovered: Remove the foil and continue baking for an additional 10 to 15 minutes, or until the apples become soft and slightly caramelized on top.
  8. Serve: Serve the baked apples warm, optionally topped with plain Greek yogurt or coconut yogurt and an extra drizzle of maple syrup for added flavor and creaminess.

Notes

  • You can substitute any firm apple variety if Honeycrisp or Fuji are unavailable.
  • If you prefer a vegan option, use coconut yogurt as the topping instead of Greek yogurt.
  • Be careful not to core the apples too deeply to avoid leakage of the filling during baking.
  • Adding water to the baking dish helps in steaming the apples gently and keeps them moist.
  • For a crunchier texture, add extra chopped walnuts on top of the filling before baking.
  • Adjust spices like cinnamon and nutmeg according to your taste preference for more or less warmth.
