Kafta Mixture

- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1 teaspoon paprika
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
For Grilling
- Wooden or metal skewers (wooden skewers soaked in water for at least 30 minutes if using)
Instructions
- Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- Mix Ingredients: In a large bowl, combine ground beef, grated onion, minced garlic, chopped parsley, allspice, cumin, cinnamon, paprika, kosher salt, black pepper, and olive oil. Mix gently but thoroughly until everything is evenly combined, taking care not to overmix to maintain tender texture.
- Form Kebabs: Divide the meat mixture into equal portions. Shape each portion around a skewer, forming long, flat kebabs that will cook evenly on the grill.
- Preheat Grill: Heat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
- Grill Kebabs: Place kebabs on the grill and cook for 4 to 5 minutes per side, turning once, until they are nicely browned and cooked through.
