Description

These Caramel Apple Pie Cookies combine the classic flavors of apple pie with a delightful caramel twist in a bite-sized cookie form. Featuring flaky pie crust, sweet apple filling, and a lattice top sprinkled with cinnamon and nutmeg sugar, these cookies are perfect for a comforting dessert or an impressive treat for gatherings.

Ingredients

Scale

Pie Dough

  • 1 package (2 crusts) refrigerated pie crust

Filling

  • 5 oz caramel topping
  • 10 oz apple pie filling

Topping and Wash

  • 1 large egg
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup granulated sugar

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or grease it lightly with nonstick cooking spray to prevent sticking.
  2. Prepare Crusts: Allow the refrigerated pie crusts to warm slightly at room temperature to make them easier to handle. Lightly dust your work surface with flour and roll each crust out a bit to smooth and stretch.
  3. Assemble Bites: Spread a thin layer of caramel topping evenly over one of the rolled-out crusts. Chop the apple pie filling into smaller pieces to distribute it evenly, then spread the filling over the caramel layer. From the second crust, cut ½-inch-wide strips and create a lattice pattern on top of the filling. Use a cookie cutter or knife to cut the assembled layers into circles or squares. Transfer these cut pie bites carefully onto the prepared baking sheet.
  4. Egg Wash and Topping: In a small bowl, beat the egg until uniform. In another bowl, combine the granulated sugar with ground cinnamon and ground nutmeg. Brush the tops of each pie bite with the beaten egg wash, then sprinkle the cinnamon sugar mixture evenly over all the bites to add color and flavor.
  5. Bake: Place the baking sheet in the preheated oven and bake the pie bites for 20 to 25 minutes, or until the crust turns a golden brown and the filling bubbles up slightly, indicating it’s cooked through.

Notes

  • Let the pie crust warm slightly before rolling to prevent cracking.
  • Use a sharp knife or cookie cutter to get clean edges when cutting the bites.
  • You can substitute caramel topping with homemade caramel sauce if preferred.
  • Allow cookies to cool slightly before serving, as the filling will be hot.
  • Store leftovers in an airtight container for up to 3 days.
