Description
Delicious and crispy cauliflower tater tots, a healthy low-carb alternative to traditional potato tots. These tots are made by steaming cauliflower florets, mixing them with flour, baking powder, and spices, then shaping into tots and baking or air frying until golden and crispy. Perfect as a snack, side dish, or appetizer.
Ingredients
Scale
Main Ingredients
- 4 cups cauliflower florets (340g)
- 1 1/2 tsp baking powder
- 1/3 cup flour (40g) (options: spelt, white, oat, gluten free all purpose, sorghum, or almond flour)
- 1 tsp dried oregano (optional)
- 1/4 tsp garlic powder
- 1/2 tsp salt
- 1/4 cup fine breadcrumbs (30g) or almond flour
Instructions
- Prepare cooking surface: Line a baking sheet with parchment paper or grease your air fryer tray to prevent sticking during cooking.
- Steam cauliflower: Steam the cauliflower florets until they become fall-apart soft. Drain thoroughly and set aside to cool completely.
- Preheat oven or air fryer: Preheat your oven to 425°F (218°C). Alternatively, if using an air fryer, preheat it to the highest temperature near 425°F.
- Mix dry ingredients: In a small bowl, combine baking powder, garlic powder, salt, flour, and optional dried oregano.
- Remove excess moisture: Place the cooled cauliflower in a clean dish towel or cheesecloth over a bowl or sink and squeeze out as much liquid as possible to ensure the mixture holds together.
- Mash cauliflower: Mash the drained cauliflower with a fork or potato masher until smooth. Stir in the dry spice mixture thoroughly. If the mixture feels too dry, gradually add a small amount of water to adjust consistency.
- Shape tots: Using your hands, press the cauliflower mixture into traditional tater tot shapes. Then roll each tot in crushed fine breadcrumbs or almond flour for a crispy finish.
- Cook the tots: Arrange the tots on the prepared baking sheet or place them in the air fryer basket. Bake in the oven for 25 minutes until light golden and crispy, or air fry for 10 minutes, shaking the basket halfway through cooking to ensure even crisping.
- Serve: Enjoy the cauliflower tots hot as a side dish or appetizer. Add your favorite toppings or dips if desired.
- Storage: Allow any leftovers to cool completely before storing them in a covered container in the refrigerator. They will keep well for up to five days.
Notes
- You can customize flour and breadcrumb types based on dietary preferences, including gluten-free or almond flour options.
- Ensure to squeeze out as much moisture as possible from the cauliflower to prevent soggy tots.
- Adjust seasoning to taste, adding more herbs or spices if preferred.
- For extra crispiness, you can also broil the tots for the last 2-3 minutes if baking.
- Serve with ketchup, ranch, or your favorite dipping sauces for a delicious snack.
