Ingredients
Scale
Main Ingredients
- 1/2 lb ground beef
- 1/4 cup diced onion
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 4 large flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup pickles, chopped
- 2 tablespoons ketchup
- 1 tablespoon mustard
- 1 tablespoon olive oil or butter, for cooking
Optional Garnishes
- Sliced tomatoes
- Shredded lettuce
Instructions
- Cook the beef: In a skillet over medium heat, cook the ground beef together with the diced onion until the beef is browned and fully cooked through. Drain any excess fat from the skillet to avoid greasiness.
- Season the beef: Add garlic powder, paprika, salt, and pepper to the cooked beef. Stir well to evenly distribute the spices, then remove the skillet from heat.
- Prepare the first tortilla: Lay one flour tortilla flat in a clean skillet set to medium heat. Evenly sprinkle half of the shredded cheddar cheese over the tortilla.
- Add beef and condiments: Spread half of the seasoned cooked beef evenly over the cheese layer. Then sprinkle chopped pickles on top and drizzle with ketchup and mustard according to taste.
- Top and cover: Add a little more shredded cheddar cheese over the beef and condiments, then cover everything with a second flour tortilla to create the quesadilla.
- Cook the quesadilla: Cook the quesadilla for 3-4 minutes until the bottom tortilla turns golden brown and the cheese begins to melt. Carefully flip it over and cook the other side for an additional 3-4 minutes until golden and the cheese is fully melted.
- Slice and rest: Remove the quesadilla from the skillet and let it cool slightly for easier slicing. Then slice it into wedges for serving.
- Repeat: Repeat steps 3 through 7 to make the second quesadilla.
- Serve: Serve the quesadillas warm, optionally accompanied by sliced tomatoes and shredded lettuce for added freshness.
Notes
- You can use either olive oil or butter for cooking; both give a nice flavor and help achieve a golden crisp crust.
- Drain excess fat after cooking the beef to prevent soggy quesadillas.
- For a spicier note, consider adding a pinch of cayenne pepper or a few dashes of hot sauce to the beef seasoning.
- Feel free to customize the toppings with your favorite burger additions like sautéed mushrooms or jalapeños.
- Use a non-stick skillet or a well-seasoned pan for easier flipping and cooking.
