Ingredients
Scale
Potatoes and Seasoning
- 2 lbs baby potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- Salt and pepper to taste
Cheese Topping and Garnish
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
- Toss Potatoes: In a large bowl, combine the halved baby potatoes with olive oil, minced garlic, dried thyme, rosemary, parsley, salt, and pepper. Toss well to coat all the potatoes evenly with the seasoning.
- Arrange Potatoes: Spread the seasoned potatoes evenly on the prepared baking sheet, placing the cut sides down to encourage extra crispiness while roasting.
- First Roast: Roast the potatoes in the preheated oven for 25 to 30 minutes, or until they become golden brown and tender when pierced with a fork.
- Add Cheese: Remove the baking sheet from the oven and evenly sprinkle the shredded mozzarella and grated Parmesan cheese over the hot potatoes.
- Final Roast: Return the cheesy potatoes to the oven and roast for an additional 5 to 7 minutes, or until the cheese has melted completely and is bubbly and slightly golden.
- Garnish and Serve: Take the potatoes out of the oven and garnish with freshly chopped parsley. Serve hot to enjoy the best flavor and texture.
Notes
- For crispier potatoes, ensure they are spread out without overcrowding on the baking sheet.
- Feel free to substitute baby potatoes with fingerlings or Yukon Golds for a different texture.
- Adjust garlic quantity to your taste preference for a stronger or milder flavor.
- Fresh herbs can be used in place of dried herbs; just use about three times the amount if substituting dried herbs.
- Leftover potatoes can be reheated in the oven to restore crispiness rather than microwaving.
