Ingredients
Scale
For the Lettuce Wraps
- 1 head iceberg lettuce
- ½ cup shaved Parmesan cheese, divided
- ½ cup croutons
- 1 cooked skin-on chicken breast, sliced (rotisserie chicken preferred)
- 1 Roma tomato, thinly sliced
- Salt, to taste
For the Caesar Dressing
- â…” cup Caesar dressing (homemade, see below)
- 3 tablespoons mayonnaise
- 2 tablespoons shaved Parmesan cheese
- 2 teaspoons olive oil
- 2 teaspoons water
- 1 clove garlic
- 1 teaspoon Worcestershire sauce
- ½ teaspoon Dijon mustard
- ½ teaspoon freshly cracked black pepper
- ¼ teaspoon kosher salt
Instructions
- Prepare Lettuce Cups: Remove the core and root end from the iceberg lettuce. Under cold running water, gently separate the outer leaves to create two large lettuce cups suitable for wrapping.
- Make Caesar Dressing: Combine the mayonnaise, shaved Parmesan, olive oil, water, garlic, Worcestershire sauce, Dijon mustard, black pepper, and kosher salt in a container. Use an immersion blender to blend the ingredients until smooth and creamy, forming the dressing.
- Assemble Wraps: Place a lettuce cup on a piece of parchment paper. Sprinkle lightly with salt. Layer half of the shaved Parmesan cheese, croutons, sliced chicken breast, and a generous amount of the Caesar dressing. Add tomato slices on top, then finish with the remaining dressing and Parmesan cheese.
- Wrap and Serve: Roll the lettuce wrap tightly using the parchment paper to help maintain shape. Secure it tightly by wrapping with plastic wrap. Cut the wrap in half and remove all wrappings before serving.
Notes
- Using rotisserie chicken saves time and adds flavor.
- For a gluten-free option, use gluten-free croutons or omit them.
- You can adjust the amount of dressing to taste or use store-bought Caesar dressing.
- Keep the wraps well chilled until serving to maintain crispness.
- These wraps make a great low-carb and refreshing meal on warm days.
