Ingredients
Scale
Chicken and Sauce
- 2 large chicken fillets (about 6 ounces each)
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- chopped fresh parsley for garnish
Fries
- 1 pound russet potatoes, cut into fries
- vegetable oil for frying
- salt to taste
- 1 teaspoon olive oil (optional, for tossing fries before baking)
Instructions
- Prepare Fries: Preheat the oven to 425°F if baking the fries, or heat vegetable oil in a deep skillet to 350°F for frying. Toss the cut potatoes with a little olive oil and salt to coat evenly. Bake for 25 to 30 minutes until golden and crisp, flipping halfway through, or fry the potatoes in batches until golden. Drain fried fries on paper towels and season with salt.
- Season Chicken: Pat the chicken fillets dry and season both sides with paprika, salt, and black pepper. This will ensure the chicken has a flavorful crust after cooking.
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken fillets and cook for 4 to 5 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside to rest.
- Make Sauce: Reduce heat to medium and melt the butter in the same skillet. Add minced garlic and red pepper flakes, cooking for about 30 seconds until fragrant. Stir in heavy cream, grated Parmesan cheese, Dijon mustard, and lemon juice. Simmer the sauce for 3 to 4 minutes until it thickens slightly.
- Combine and Serve: Return the cooked chicken to the skillet, coating each fillet thoroughly with the creamy sauce. Serve the chicken fillets topped with sauce alongside the hot fries. Garnish with chopped fresh parsley for a burst of color and freshness.
Notes
- For a lighter sauce, substitute half-and-half for the heavy cream.
- To make this meal more balanced, serve with steamed vegetables on the side.
- Adjust the amount of red pepper flakes to control the spice level to your preference.
- Baking fries is a healthier alternative to frying if desired.
- Ensure chicken is cooked to an internal temperature of 165°F for safety.
