These delicious Chocolate Date Almond Bars combine naturally sweet dates with nutty almond flour and rich dark chocolate. - 2 cups fresh dates
- 2 cups almond flour
- 1/4 cup sunflower seed butter
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 2–3 tablespoons water
Chocolate Topping
- 1 1/4 cups dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Pit and Process Dates: Pit the fresh dates and place them in a food processor.
- Add Ingredients and Pulse: Add almond flour, sunflower seed butter, pure vanilla extract, salt, and 2 tablespoons of water to the food processor. Pulse until the mixture forms a cookie dough-like texture.
- Adjust Consistency: Add an additional tablespoon of water if needed to achieve a sticky but moldable dough.
- Press Dough into Pan: Line an 8×8 inch baking pan with parchment paper. Press the prepared dough evenly into the pan to form the base layer.
- Melt Chocolate: In a heatproof bowl, melt the dark chocolate chips together with coconut oil, either over a double boiler or carefully in short bursts in the microwave, stirring frequently until smooth.
- Top and Chill: Pour the melted chocolate evenly over the date and almond dough base. Smooth it out with a spatula. Refrigerate the pan for at least 30 minutes or until the chocolate has fully set.
- Slice and Serve: Once the bars are set and firm, remove from the pan using the parchment paper. Slice into 12 bars and store them refrigerated to maintain freshness and firmness.
