Description

Indulge in these elegant Chocolate Raspberry Mousse Bites, featuring a rich and airy chocolate mousse filled with sweet raspberry jam and coated in a smooth chocolate shell. Perfect as bite-sized treats for parties or a luxurious dessert, these mousse bites combine creamy textures with fruity freshness and optional beautiful garnishes like dried rose petals and edible glitter.

Ingredients

Scale

For the Mousse Filling:

  • 1 cup heavy cream
  • 1/2 cup chocolate chips (milk or dark, depending on preference)
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar

For the Raspberry Filling:

  • 1/2 cup raspberry jam or preserves

For the Chocolate Coating:

  • 1 1/2 cups melted chocolate chips (for coating)
  • 1 tablespoon coconut oil (optional, for a smoother coating)

For Toppings (Optional):

  • Dried rose petals
  • Edible glitter or sugar sprinkles
  • Extra melted chocolate for drizzling

Instructions

  1. Make the Chocolate Mousse: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until fully melted. Set aside to cool slightly.
  2. Whip Cream: In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form, ensuring the cream is fluffy and light.
  3. Combine Mousse Mixture: Gently fold the melted chocolate and vanilla extract into the whipped cream until fully combined and fluffy. Refrigerate the mousse for 30 minutes to firm up.
  4. Form Mousse Bites: Take small spoonfuls of the chocolate mousse and form them into bite-sized discs using a mini silicone mold or by hand.
  5. Add Raspberry Filling: Place a small amount of raspberry jam in the center of each mousse disc. Press the top gently to secure the jam. Repeat with the remaining mousse and jam, then freeze the bites for at least 1 hour.
  6. Melt Coating Chocolate: Melt the chocolate chips with coconut oil, if using, in a microwave-safe bowl until smooth and runny.
  7. Coat the Mousse Bites: Remove the mousse bites from the freezer. Using a fork or dipping tool, dip each frozen mousse bite into the melted chocolate, making sure it is fully coated. Allow excess chocolate to drip off before placing it on a parchment-lined tray.
  8. Decorate: While the chocolate is still wet, sprinkle the bites with dried rose petals, edible glitter, or sugar sprinkles. Optionally, drizzle extra melted chocolate on top for added decoration.
  9. Set and Serve: Allow the bites to set completely at room temperature or in the fridge for about 15 minutes before serving.

Notes

  • You can substitute dark chocolate for milk chocolate for a richer taste.
  • Use fresh raspberries instead of jam for a more natural texture.
  • Freezing the mousse bites before coating ensures the chocolate shell hardens quickly and crisply.
  • Store the mousse bites in an airtight container in the refrigerator for up to 3 days.
  • For a smoother chocolate coating, the addition of coconut oil is optional but recommended.
