Instructions

  1. Preheat the Oven: Preheat your oven to 180°C (350°F) standard or 160°C (320°F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the plain flour, baking powder, baking soda, salt, and 150 grams of caster sugar. Add the peeled and roughly chopped red apple to this mixture and stir briefly to distribute the fruit evenly.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, vanilla extract, vegetable oil, and Greek yogurt until well blended and smooth.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl with the dry ingredients and mix gently with a spatula or spoon, just until everything is combined. Avoid overmixing to keep the cake tender.
