Ingredients
Scale
Potatoes
- 1.5 lbs baby potatoes, halved
Seasoning
- 3 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Garnish
- Fresh parsley (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to ensure the potatoes don’t stick and for easy cleanup.
- Toss Potatoes: In a large bowl, combine the halved baby potatoes with olive oil, dried rosemary, dried thyme, dried oregano, garlic powder, onion powder, salt, and pepper. Toss thoroughly to coat the potatoes evenly with the seasoning.
- Roast: Spread the seasoned potatoes out in a single layer on the prepared baking sheet to ensure they roast evenly. Place in the preheated oven and roast for 25-30 minutes, tossing the potatoes halfway through to promote even browning. Roast until the potatoes are golden brown and crispy on the outside, yet tender inside.
- Serve: Remove the roasted potatoes from the oven. Garnish with freshly chopped parsley for a burst of color and fresh flavor before serving.
Notes
- Use baby potatoes for even cooking and a nice crispy texture.
- Tossing the potatoes halfway through roasting helps them brown evenly on all sides.
- You can substitute fresh herbs if available—reduce the quantity to 1 tablespoon of each fresh herb.
- Adjust salt and pepper according to taste to suit dietary preferences.
- Serve immediately for the best crispiness as the potatoes soften once cooled.
