Instructions
- Prepare the Potato Mixture: In a large bowl, combine the cooked and cubed russet potatoes, diced bacon, diced green onions, sour cream, salt, and pepper. Mash everything together until mostly smooth, leaving some small chunks for added texture.
- Cut the Cheese: Slice the block of cheddar cheese into strips approximately ¼ inch thick, ensuring they are uniform for even cooking.
- Shape the Potato Cheese Sticks: Take a spoonful of the mashed potato mixture and flatten it in your palm. Place one cheese strip in the center and wrap the potato mixture around the cheese fully, forming a stick shape. Repeat for the remaining mixture and cheese.
- Coat the Potato Sticks: Set up a breading station with three separate dishes: one with flour, one with beaten egg, and one with a mix of cornstarch and panko breadcrumbs. Roll each potato cheese stick first in flour, then dip into the egg wash, and finally coat thoroughly with the breadcrumb mixture.
- Fry the Potato Cheese Sticks: Heat vegetable oil in a deep pot or large skillet to 350°F (180°C). Fry the breaded sticks in batches for about 3 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them and let them drain on paper towels. Sprinkle with a pinch of salt while still warm.
- Optional – Bake Instead of Frying: For a healthier option, preheat your oven to 400°F (200°C). Place the coated sticks on a parchment-lined baking sheet, lightly drizzle with olive oil, and sprinkle with salt. Bake for approximately 15 minutes or until the sticks are golden brown and crispy.
