Description

Instructions

  1. Preheat and Sauté Vegetables: Preheat the oven to 350°F (177°C). In a cast-iron skillet, heat the olive oil over medium heat. Add the diced bell pepper and onion, cooking until they are softened and lightly browned. Once done, remove the skillet from heat and set aside the vegetable mixture.
  2. Prepare Chicken: Butterfly the chicken breasts by slicing horizontally through the side to create a pocket for the filling. Season both sides of the chicken breasts evenly with taco seasoning.
  3. Stuff and Sear: Spoon the sautéed bell pepper and onion mixture along with shredded Monterey Jack cheese into the pocket of each chicken breast. Use toothpicks to secure the openings if necessary. Add more olive oil to the skillet if needed, then sear the stuffed chicken breasts on both sides over medium heat until they develop a golden-brown crust.
  4. Bake: Transfer the skillet with the seared, stuffed chicken into the preheated oven. Bake for 15 to 25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C), ensuring the chicken is cooked through.
  5. Serve: Remove toothpicks before serving. Serve the stuffed chicken hot with lime wedges and your favorite toppings such as sour cream, guacamole, salsa, or pico de gallo for an extra burst of flavor.
