Description

Garlic Mushroom Chicken Bites are a flavorful and juicy skillet-cooked dish featuring tender chicken pieces and sautéed mushrooms infused with garlic, herbs, and a splash of lemon. Perfect for a quick and satisfying gluten-free main course that pairs wonderfully with rice, mashed potatoes, or pasta.

Ingredients

Scale

Chicken

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning

Mushrooms and Aromatics

  • 8 ounces mushrooms, sliced
  • 3 tablespoons olive oil, divided
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced

Finishing

  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Season the chicken: In a bowl, toss the bite-sized chicken pieces with salt, black pepper, paprika, and Italian seasoning to coat evenly, ensuring every piece is well-seasoned.
  2. Cook the chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken pieces in a single layer and cook for 5 to 7 minutes, turning occasionally until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté mushrooms and garlic: Reduce heat to medium. In the same skillet, add the remaining olive oil and butter. Once melted, add the sliced mushrooms and cook for 4 to 5 minutes until they release moisture and start to brown. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Combine and finish: Return the cooked chicken to the skillet, tossing to coat it evenly with the mushrooms and garlic. Drizzle with lemon juice and sprinkle with fresh parsley. Cook for an additional 1 to 2 minutes until everything is heated through and flavors meld.
  5. Serve: Serve the Garlic Mushroom Chicken Bites immediately, over your choice of rice, mashed potatoes, or pasta, or enjoy as a low-carb appetizer.

Notes

  • Serve over rice, mashed potatoes, or pasta for a heartier meal.
  • For extra richness, add a splash of chicken broth or cream at the end of cooking.
  • This dish also works well as a low-carb appetizer.
