Ingredients
Scale
Fruit and Greens
- 4 ripe peaches (halved and pitted)
- 1 cup fresh blueberries
- 4 cups mixed greens (such as arugula, spinach, or spring mix)
Cheese and Nuts
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup toasted pecans or walnuts (roughly chopped)
Dressing
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Prepare the Grill: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent the peaches from sticking during cooking.
- Grill the Peaches: Brush the cut sides of the peach halves with olive oil. Place them cut-side down on the hot grill. Grill for 3-4 minutes until they develop distinct grill marks and become slightly softened. Remove from the grill and allow to cool briefly, then slice each peach half into wedges.
- Make the Dressing: In a small bowl or jar with a lid, whisk or shake together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth and well combined.
- Assemble the Salad: In a large salad bowl, combine the mixed greens, grilled peach wedges, fresh blueberries, crumbled feta cheese (if using), and toasted nuts.
- Dress the Salad: Drizzle the prepared dressing evenly over the salad. Toss gently to ensure all ingredients are coated with the dressing.
- Serve: Serve the salad immediately for the best flavor and texture as a light lunch, appetizer, or side dish.
Notes
- Grilling peaches enhances their natural sweetness and adds a smoky depth to the salad.
- Feta cheese is optional but adds a creamy, tangy contrast to the sweet fruit and crunchy nuts.
- Use toasted pecans or walnuts for added texture and flavor; lightly toast them in a dry skillet if not pre-toasted.
- The dressing can be adjusted to taste—add more honey for sweetness or more mustard for tang.
- To save time, grill peaches in advance and keep refrigerated until ready to assemble.
