Instructions

  1. Preheat Oven & Prep Pan: Preheat your oven to 350°F (175°C). Prepare a 9-inch round or square baking pan by greasing it lightly or lining it with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, ground nutmeg, and salt. Stir well to evenly distribute the leavening and spices throughout the oats.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, maple syrup (or honey), unsweetened applesauce, milk, and vanilla extract until smooth and fully combined.
  4. Combine & Fold in Apples: Pour the wet ingredients into the dry ingredients bowl. Stir gently but thoroughly until the mixture is fully combined. Carefully fold in the diced apples and, if using, the chopped walnuts or pecans for added texture and flavor.
  5. Bake: Pour the batter evenly into the prepared baking pan. Place it in the preheated oven and bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean, indicating it is cooked through.
