Description

Healthy Cosmic Brownie Protein Bites are a delicious, guilt-free snack packed with protein and rich chocolate flavor. These no-bake bites combine oats, protein powder, cocoa, and nut butter with a touch of natural sweetness for a perfect pre- or post-workout boost. Easy to make and customizable with your favorite nut butter and optional sprinkles, they’re an ideal on-the-go treat for anyone craving a healthy dessert or snack.

Ingredients

Scale

Dry Ingredients

  • 1 cup rolled oats
  • 1/2 cup chocolate protein powder
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Add-ins

  • 2 tablespoons mini dark chocolate chips
  • 2 tablespoons rainbow sprinkles (optional)

Instructions

  1. Combine Dry Ingredients. In a large bowl, mix the rolled oats, chocolate protein powder, unsweetened cocoa powder, and salt until evenly combined.
  2. Mix Wet Ingredients. In a separate bowl, whisk together the almond butter, honey (or maple syrup), unsweetened applesauce, and vanilla extract until smooth and well incorporated.
  3. Combine Wet and Dry. Pour the wet ingredients mixture into the dry ingredient bowl. Stir well until everything is fully combined and the mixture starts to bind together.
  4. Add Chocolate Chips and Sprinkles. Gently fold in the mini dark chocolate chips and, if desired, the rainbow sprinkles to add texture and a fun pop of color.
  5. Form Bites. Using your hands or a small cookie scoop, shape the mixture into bite-sized balls about 1 inch in diameter.
  6. Chill to Set. Place the protein bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up and hold their shape.
  7. Store Properly. Keep the bites in an airtight container in the refrigerator for up to one week or freeze them to extend shelf life for longer storage.

Notes

  • These protein bites are naturally sweetened and make an excellent pre- or post-workout snack.
  • You can substitute almond butter with peanut butter or sunflower seed butter to change up the flavor.
  • For a gluten-free version, ensure rolled oats are certified gluten-free.
  • Adjust sweetness by varying the amount of honey or maple syrup according to your taste.
  • Use dark chocolate chips to keep added sugar minimal and enhance antioxidants.
