Description

This healthy and guilt-free Apple Cake combines grated apples, raisins, and a touch of vanilla for a naturally sweet and moist dessert. Baked to golden perfection, it’s an easy-to-make treat perfect for any occasion.

Ingredients

Scale

Fruit

  • 2 apples (grated or finely chopped)
  • 50g raisins (natural sweetness!)

Wet Ingredients

  • 2 eggs
  • 1 tsp vanilla extract
  • 50g melted butter

Dry Ingredients

  • 90g all-purpose flour
  • 5g baking powder
  • Pinch of salt

Instructions

  1. Preheat Oven: Preheat the oven to 180°C (350°F) to ensure it’s at the right temperature when you’re ready to bake the cake.
  2. Whisk the Wet Ingredients: In a medium bowl, whisk together the eggs, pinch of salt, and vanilla extract until the mixture becomes fluffy and well combined.
  3. Add Apples and Raisins: Fold in the grated or finely chopped apples along with the raisins, mixing well to evenly distribute the fruit throughout the batter.
  4. Add Melted Butter: Pour in the melted butter and stir again to fully incorporate it into the wet mixture, ensuring the batter remains smooth.
  5. Sift the Dry Ingredients: Sift the all-purpose flour and baking powder into the bowl, then gently stir the batter until smooth and free of lumps, taking care not to overmix.
  6. Prepare for Baking: Line a baking dish with parchment paper and pour the batter evenly into it, spreading it out gently.
  7. Bake the Cake: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the cake turns golden brown and a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the cake to cool in the baking dish before slicing. For an added touch, sprinkle some cinnamon on top before baking or dust over the cooled slices before serving for extra flavor.

Notes

  • For extra flavor, sprinkle cinnamon on top of the batter before baking.
  • Use a mix of tart and sweet apples for balanced taste.
  • Ensure apples are well grated or finely chopped for an even texture.
  • Check cake doneness by inserting a toothpick; it should come out clean when ready.
  • Store leftovers in an airtight container for up to 3 days.
