Description

Delicious and creamy mashed potato cups baked to golden perfection, featuring tender russet potatoes mixed with butter, milk, cheddar cheese, green onions, and optional chopped meat. These bite-sized potato cups make a perfect side dish or appetizer that’s crispy on the edges and soft on the inside.

Ingredients

Scale

Potato Base

  • 3 large russet potatoes, peeled and diced
  • 2 tablespoons butter
  • 1/4 cup milk
  • Salt and pepper to taste

Mix-ins

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped meat (optional)

For Greasing

  • Olive oil spray

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and grease a muffin tin with olive oil spray to prevent sticking.
  2. Cook Potatoes: Bring water to a boil in a large pot and add the diced potatoes. Cook for 10-12 minutes until the potatoes are tender when pierced with a fork.
  3. Drain and Mash: Drain the cooked potatoes thoroughly and return them to the pot. Mash the potatoes until smooth and free of lumps.
  4. Add Butter and Milk: Stir in the butter and milk gradually until the mixture reaches a creamy and smooth consistency. Season with salt and pepper to taste.
  5. Mix in Cheese and Extras: Fold in the shredded cheddar cheese, chopped green onions, and chopped meat if using, ensuring even distribution throughout the mashed potatoes.
  6. Form Cups: Spoon the mashed potato mixture into the greased muffin tin cavities, pressing down gently to create cup shapes with slightly raised edges.
  7. Bake: Bake the cups in the preheated oven for 20-25 minutes, or until the edges turn golden brown and become crispy.
  8. Cool and Serve: Allow the potato cups to cool for a few minutes in the tin before carefully removing them. Serve warm as a delightful side or appetizer.

Notes

  • For a vegetarian version, omit the chopped meat.
  • You can substitute milk with cream or a dairy-free alternative for different textures.
  • Try adding herbs like parsley or chives for additional flavor.
  • Leftover mashed potato cups can be refrigerated and reheated in the oven to retain crispiness.
  • Use a non-stick muffin tin or ensure thorough greasing to prevent sticking.
