Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the tortillas and assembling the pizza layers.
- Cook Ground Beef: In a skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon. Drain any excess fat, then stir in taco seasoning and water. Simmer for 3–4 minutes until the mixture thickens to enhance the flavors.
- Warm Refried Beans: In a separate pan, gently warm the refried beans until they reach a spreadable consistency, making them easier to layer on the tortillas.
- Prepare Tortillas: Lightly brush both sides of each flour tortilla with vegetable oil. Arrange the tortillas on a baking sheet and bake them in the preheated oven for 4–5 minutes per side, or until golden and crispy. This will create a sturdy base and top for the pizza layers.
- Assemble Pizza Layers: Spread the warm refried beans evenly over four of the baked tortillas. Top each with the seasoned ground beef. Place the remaining tortillas on top to form pizza layers.
- Add Sauce and Toppings: Spread a spoonful of enchilada or taco sauce over each top tortilla. Sprinkle with shredded Mexican blend cheese, then evenly add diced tomatoes, sliced black olives, and green onions for freshness and flavor.
