Description

These Monster Energy Bites are a quick and easy no-bake snack packed with oats, peanut butter, honey, and a fun mix of mini chocolate chips and M&Ms. Perfectly portioned into bite-sized balls, they make a satisfying and energy-boosting treat that’s ideal for an on-the-go snack or a quick pick-me-up.

Ingredients

Scale

Energy Bites Ingredients

  • 1 cup old-fashioned oats
  • 1/2 cup natural peanut butter
  • 1/3 cup honey
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini M&Ms
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Combine Ingredients: In a large mixing bowl, combine the old-fashioned oats, natural peanut butter, honey, mini chocolate chips, mini M&Ms, vanilla extract, and a pinch of salt.
  2. Mix Well: Stir the mixture until well combined. If the mixture is too sticky, add more oats; if too dry, add more peanut butter or honey to achieve the right consistency.
  3. Chill the Mixture: Place the mixture in the refrigerator and chill for about 30 minutes to help it firm up and make rolling easier.
  4. Form Energy Bites: Roll the chilled mixture into small bite-sized balls, approximately 1 inch in diameter.
  5. Set the Bites: Arrange the energy bites on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to allow them to set completely.
  6. Store Properly: Store the energy bites in an airtight container in the refrigerator for up to 1 week to maintain freshness.

Notes

  • Adjust the sweetness or texture by adding more honey or oats as needed.
  • You can substitute peanut butter with almond butter or another nut/seed butter of choice for variation.
  • For a nut-free version, use sunflower seed butter instead of peanut butter.
  • Energy bites can also be stored in the freezer for up to 3 months; thaw before eating.
  • Mix-ins like dried fruit, nuts, or seeds can be added for extra flavor and texture.
