Description

This Nutella Stuffed Cookie Pie is a decadent dessert featuring a rich brown butter cookie dough filled with creamy Nutella and studded with chocolate chips. Baked to golden perfection, this gooey-centered pie offers an irresistible combination of textures and flavors, perfect for sharing or indulging as a comforting treat.

Ingredients

Scale

Cookie Dough

  • 240 grams brown butter
  • 70 grams granulated sugar
  • 140 grams brown sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 300 grams all-purpose flour
  • 200 grams chocolate chips

Filling and Topping

  • 150 grams Nutella (use 100g for filling, reserve extra if desired for drizzling or serving)
  • 40 grams chocolate chips (for topping)

Instructions

  1. Brown the Butter: In a saucepan over medium heat, melt the butter while stirring constantly. Let it foam and continue cooking until it turns a golden brown color and emits a nutty aroma. Immediately transfer the browned butter to a heatproof bowl and allow it to cool completely.
  2. Mix the Sugars and Eggs: In a large mixing bowl, combine the brown sugar, granulated sugar, and eggs. Whisk vigorously for 2-3 minutes until the mixture becomes light and fluffy, which helps incorporate air for a tender cookie texture.
  3. Add Vanilla and Cooled Brown Butter: Pour the cooled browned butter and vanilla extract into the sugar and egg mixture. Whisk until the mixture is smooth and fully combined.
  4. Incorporate Dry Ingredients: Using a spatula, gently fold in the all-purpose flour until no dry flour is visible, being careful not to overmix to maintain a tender dough.
  5. Fold in Chocolate Chips: Gently fold the 200 grams of chocolate chips into the dough to distribute them evenly.
  6. Prepare the Pie Dish: Grease a pie dish with butter or non-stick spray. For easier removal, line the base and sides with parchment paper.
  7. Assemble the Cookie Pie: Press half the cookie dough evenly into the base and slightly up the sides of the prepared pie dish. Spread 100 grams of Nutella over the dough base, covering the center. Gently spread the remaining dough over the Nutella, sealing the edges well to encase the filling. Sprinkle 40 grams of chocolate chips on top if desired.
  8. Bake the Cookie Pie: Preheat the oven to 180°C (356°F). Bake the pie for 35 to 40 minutes or until the edges are golden brown and the center remains slightly soft and gooey.
  9. Cool and Serve: Let the pie cool in the pan for at least 20 minutes before slicing to allow it to set. Serve warm, optionally with a scoop of ice cream or drizzled with extra Nutella or chocolate sauce.

Notes

  • Use parchment paper to prevent sticking and ensure easy removal of the cookie pie.
  • Do not overbake; the center should remain slightly soft for the best gooey texture.
  • Brown butter adds a nutty, complex flavor which enhances the cookie dough significantly.
  • You can drizzle additional Nutella or serve with vanilla ice cream for extra indulgence.
  • Make sure the browned butter is completely cooled before mixing with eggs to avoid cooking them prematurely.
