Ingredients
Scale
For the Peach Filling
- 6 cups (about 6-7) fresh peaches, peeled and sliced (or 2 lbs frozen, thawed)
- 1/3 cup (65 g) granulated sugar
- 1/4 cup (50 g) brown sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg (optional)
- 1 tbsp cornstarch
For the Cobbler Topping
- 1 cup (125 g) all-purpose flour
- 1/2 cup (100 g) granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (120 ml) whole milk
- 4 tbsp (60 g) unsalted butter, melted
To Serve
- Vanilla ice cream
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish thoroughly to prevent sticking.
- Prepare the Filling: In a large bowl, combine the peeled and sliced peaches with granulated sugar, brown sugar, lemon juice, vanilla extract, ground cinnamon, nutmeg (if using), and cornstarch. Mix gently to coat the peaches evenly. Spread this mixture evenly into the greased baking dish.
- Make the Topping: In a separate medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Stir in the whole milk and melted unsalted butter until the batter is smooth and well combined.
- Assemble and Bake: Drop spoonfuls of the batter evenly over the peach filling, leaving some areas of the peaches exposed to allow bubbling. Place the dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
- Cool and Serve: Remove the cobbler from the oven and let it cool slightly for 10-15 minutes. Serve warm in bowls topped with creamy vanilla ice cream for the perfect finish.
Notes
- Peaches can be fresh or frozen; if using frozen, ensure they are fully thawed and drained well to avoid excess liquid.
- Nutmeg is optional but adds a nice warm spice; feel free to omit if preferred.
- Do not overmix the topping batter to maintain a light, fluffy texture.
- Allow the cobbler to cool slightly before serving to let the filling set and avoid burning.
- For a dairy-free version, substitute milk and butter with plant-based alternatives and serve with dairy-free ice cream.
