Instructions

  1. Mix Wet Ingredients: Whisk together the eggs, melted butter, and vanilla extract in a large bowl until combined smoothly.
  2. Combine with Dry Ingredients: Add the red velvet cake mix and espresso powder if using, then stir until the dough is fully incorporated and uniform in color and texture.
  3. Chill the Dough: Cover the dough and chill in the refrigerator for about 30 minutes to make it easier to handle and roll into balls.
  4. Form and Coat Cookies: Preheat the oven to 350°F (175°C). Once chilled, roll the dough into 1½ inch balls and roll each ball in the sugar to coat evenly.
  5. Bake the Cookies: Place the sugar-coated dough balls on a baking sheet lined with parchment paper or a silicone mat. Bake for 8-10 minutes, until the edges start to set, and the cookies are puffed and just beginning to crinkle.
