- 1 pound Italian sausage links
Vegetables
- 3 medium bell peppers (different colors), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced

- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper, to taste
- 4 hoagie rolls, split lengthwise
Instructions
- Cook Sausage: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the Italian sausage links and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes. Remove the sausages from the skillet and slice them if preferred.
- Sauté Vegetables: Add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced bell peppers and onions, cooking over medium heat until they start to soften, approximately 5 minutes.
- Add Spices and Sausages: Stir in minced garlic, dried oregano, dried basil, salt, and black pepper. Cook for about 1 minute until fragrant. Return the sliced or whole sausages to the skillet and continue cooking until the sausages are fully cooked and the vegetables are tender, around 5 more minutes.
- Assemble Sandwiches: Optionally toast the hoagie rolls. Fill each roll generously with the sausage and pepper-onion mixture. Serve warm.
