Description

This Strawberry Cream Cheese Icebox Cake is a refreshing no-bake dessert featuring layers of creamy sweetened cream cheese filling, fresh strawberries, and crunchy graham crackers. Chilled overnight, the crackers soften to create a luscious, cake-like texture that’s perfect for warm weather or any occasion. Easy to assemble and requiring minimal ingredients, this cake offers a delightful balance of tangy cream cheese and sweet strawberries in every bite.

Ingredients

Scale

Cream Cheese Filling

  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional, for a slight tang)

Layers

  • 1 box graham crackers (about 14-16 crackers)
  • 2 cups fresh strawberries, sliced

For Garnish (Optional)

  • Additional whole strawberries
  • Whipped cream

Instructions

  1. Prepare the Cream Cheese Filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy. Add the powdered sugar, vanilla extract, and lemon juice (if using), and continue to beat until fully incorporated. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and well combined. Set aside.
  2. Layer the Icebox Cake: In a 9×13-inch baking dish, spread a thin layer of the cream cheese filling at the bottom. Arrange a layer of graham crackers on top, breaking to fit if needed. Spread half of the cream cheese mixture evenly over the crackers, then add a layer of sliced strawberries. Repeat with another layer of graham crackers, the remaining cream cheese filling, and a final layer of strawberries.
  3. Chill the Cake: Cover the dish with plastic wrap or foil and refrigerate for at least 4 hours, or preferably overnight. This allows the graham crackers to absorb moisture and flavors, softening into a cake-like texture.
  4. Serve: Before serving, garnish with additional whole strawberries and a swirl of whipped cream if desired. Slice carefully and serve chilled for best taste and texture.

Notes

  • For best results, chill the cake overnight to allow the flavors to meld and crackers to soften properly.
  • You can substitute raspberries or blueberries for strawberries for a different berry twist.
  • Ensure the cream cheese is fully softened for a smooth filling without lumps.
  • If you prefer a less sweet cake, reduce the powdered sugar to 3/4 cup.
  • Use fresh, ripe strawberries for the best flavor and texture.
