- 1/2 cup sour cream
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives (optional)

Instructions
- Preheat and Prepare Muffin Tin: Preheat the oven to 375°F (190°C) and lightly grease a standard muffin tin with nonstick cooking spray to ensure easy removal of the taco cupcakes.
- Cook Ground Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it up into small pieces as it cooks to ensure even cooking.
- Season Beef: Drain excess grease from the skillet. Stir in the taco seasoning packet and 1/3 cup water. Simmer the mixture for 3 to 4 minutes until the sauce thickens, then remove from heat.
- Form Biscuit Crusts: Press one biscuit half into the bottom and up the sides of each greased muffin cup to form a crust, creating a small cup shape to hold the taco filling.
- Fill and Top: Spoon the seasoned ground beef evenly into each biscuit crust. Top each cup with salsa and then sprinkle shredded cheese on top.
- Bake: Place the muffin tin in the oven and bake for 15 to 18 minutes, or until the biscuit edges turn golden brown and the cheese has melted.
- Cool and Remove: Remove the taco cupcakes from the oven and allow them to cool for 5 minutes in the pan. Then carefully remove the cupcakes from the muffin tin.
- Add Final Toppings and Serve: Top each taco cupcake with sour cream, diced tomatoes, sliced black olives (if using), and chopped green onions for added flavor and freshness before serving.
