Description

This comforting Tuscan Tortellini Soup features flavorful Italian sausage, tender cheese tortellini, and fresh spinach in a creamy tomato-infused broth. A perfect, hearty Italian soup that’s easy to make on the stovetop, combining robust seasonings with a luscious cream finish.

Ingredients

Scale

Sauté Base

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 small onion, diced
  • 2 cloves garlic, minced

Soup Liquid

  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream

Main Ingredients

  • 9 ounces refrigerated cheese tortellini
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese (plus more for serving, optional)

Instructions

  1. Cook the Sausage: Heat the olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it up as it cooks to ensure even browning.
  2. Sauté Onion and Garlic: Stir in the diced onion and cook for 3 to 4 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add Liquids and Seasonings: Pour in the chicken broth and add the drained diced tomatoes, Italian seasoning, salt, and black pepper. Bring the mixture to a gentle boil.
  4. Simmer the Soup: Reduce the heat and let the soup simmer for 10 minutes to allow the flavors to meld.
  5. Incorporate Cream and Tortellini: Stir in the heavy cream, then add the refrigerated cheese tortellini. Cook according to package directions, about 5 to 7 minutes, until the tortellini is tender.
  6. Add Spinach and Finish: Add the roughly chopped spinach and cook for 1 to 2 minutes until wilted. Remove the pot from heat and stir in the grated Parmesan cheese.
  7. Serve: Serve the soup warm with additional Parmesan cheese if desired for extra flavor.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
  • This soup thickens as it sits; add a splash of broth when reheating if needed to loosen it.
